
Office potluck today, and I brought mashed potatoes. Don’t really have a way to reheat in our staff kitchen so I brought my set up with me.
Did not have sous vide under my desk on my 2025 bingo card!
Made them ahead. 185 for a couple hours. Bag had cubed and peeled potatoes, cream, brown butter and salt and pepper.

Y’all they’re not making mashed potatoes, they’re reheating mashed potatoes. Not that crazy. Sous vide for reheating food is fantastic.
Great way to reheat, without having to mess with it!
If you cut a 45 degree angle off the bag and seal it, you also have a great way to pipe them when serving.

I had a party catered by Texas Roadhouse and I think there were like 30lbs of baked potatoes left over so I scooped out the cooked potato, bagged with cream and leftover whipped butter salt pepper (not the cinnamon honey butter) and vacuum sealed and froze.
I just toss in the sous vide with whatever meat to warm through then mash around in the bag until homogeneous. Super convenient for a bunch of meals.
